For the crust
200 grams Pastry flour
120 grams cold butter (cubed)
1 egg
1 tsp salt
butter (for greasing the tart pan)
For the filling
150 grams smoked Bacon
100 grams cooked ham
2 onions
1 tsp butter
2 Tbsps chopped parsley
3 eggs
150 milliliters milk
200 milliliters Whipped cream (at least 30% fat content)
3 Tbsps grated Gruyere

Preparation steps

For the crust: Knead together the flour, butter, egg and salt until smooth. Wrap with plastic wrap and refrigerate for 30 minutes. Roll the dough out very thinly between two sheets of plastic wrap, place into a greased tart pan and trim the excess with the back of a knife. Preheat the oven to 200°C (approximately 400°F).

For the filling: Cut the bacon and the ham into thin strips. Peel the onions, chop finely and sauté in butter until softened. Whisk the eggs with the milk and heavy cream until smooth. Season with salt, pepper and nutmeg. Stir in the grated cheese, bacon, ham, onions and chopped parsley. Pour the mixture into the prepared crust and bake for 40-45 minutes, until golden brown. Remove from the oven and allow to cool slightly. Carefully remove from the tart pan, cut into slices and serve.
