Ingredients

For the crust
150 grams Pastry flour
100 grams butter
1 egg
1 tsp salt
For the filling
200 grams smoked Bacon
150 milliliters milk
250 milliliters Whipped cream
150 grams Crème fraiche
75 grams grated Gruyere
1 onion

4 eggs

Preparation steps

1.

For the crust: Combine flour, butter, egg and salt. Knead to form a dough. Wrap in foil and chill for 30 minutes. 

2.

Thinly roll out dough between 2 sheets of plastic wrap. Press the dough into the pan, creating a 2 cm (approximately 3/4 inch) high rim.

Preheat the oven to 200°C (approximately 390°F).

For the filling: Cut bacon into small cubes. Peel and dice onion. Beat eggs and mix in milk, cream, creme fraiche cheese, onions and bacon. Season with salt, pepper and nutmeg. Pour mixture into crust. 

4.

Bake for 40-45 minutes, until golden brown.

5.

Remove, slice and serve with lettuce, as desired.
