- 2 fresh Salmon fillet
- ½ lemon (sliced)
- salt

- 11 ozs small new Potato
- 3 Lettuce
- 3 ½ ozs cooked Green beans
- 2 Tbsps black Olives
- 2 hard-boiled eggs (shelled and quartered)
- 2 Tbsps extra virgin olive oil
- 1 Tbsp lemon juice

Preparation steps
1.
Put the salmon and lemon slices into a frying pan and cover with water. Add a pinch of salt and bring to a boil, then reduce to a simmer, cover and cook gently for 5-10 minutes until the salmon is cooked. Drain and set aside.
2.
Cook the potatoes in boiling salted water for 10-15 minutes until tender. Drain and set aside.
3.
Thickly slice the potatoes. Cut the salmon into bite-size pieces.
4.
Arrange the lettuce leaves on serving plates. Add the potatoes, salmon, green beans, olives and eggs.
5.
Whisk the oil with the lemon juice, salt and pepper and drizzle over the salads. Serve immediately
