- 2 tsps vegetable oil
- 8 slices Bacon (chopped)
- 1 large onion (chopped)
- 2 Tbsps fresh thyme
- 2 cups light ligth cream
- 1 clove garlic cloves (crushed)
- 3 large, waxy potatoes (peeled and thinly sliced)
- freshly ground Black pepper (to taste)
- 8 ozs Brie (cut into thin slices)

Preparation steps
1.
Preheat the oven to 350ºF / 180°C and lightly grease a rectangular baking dish.
2.
Heat the oil in a frying pan and fry the bacon and onion over medium heat 4-5 minutes, just until bacon begins to brown.
3.
Place the thyme, cream and garlic in a large pan; bring to a simmer. Add the potatoes; cover and cook for 5 minutes. Stir in the bacon and onions and season with freshly ground black pepper.
4.
Place half the potato mixture in the base of the prepared dish, then top with half the sliced cheese. Repeat, finishing with a layer of cheese.
5.
Bake for 40-45 minutes, until the potatoes are tender when pierced with a knife, and the top is golden. Let rest for 5 minutes before cutting.
