Healthy Coley Oven Bake
- 4 firm White fish (e. g. coley)
- 2 zucchini (sliced)
- 2 Tbsps olive oil
- 12 cherry tomatoes
- 4 ½ ozs Green beans (topped and tailed)
- freshly ground Black pepper
- To garnish
- 2 Tbsps chopped parsley
Heat the oven to 200°C (180° fan) 400°F gas 6.
Put the fish and courgettes into a large baking dish and drizzle with half the oil. Cook for 5 minutes.
Add the cherry tomatoes and green beans to the dish. Season to taste with salt and black pepper and drizzle with the remaining oil.
Cook for a further 15 minutes, until the fish is cooked and the vegetables are tender.
Sprinkle with the parsley and serve immediately.
