Preparation steps

1.

Peel and finely chop the egg. Halve the avocados lengthwise, remove the seeds, and scoop the flesh into a bowl. Add the lemon juice, and mix using a fork.

2.

Peel the garlic and pass through a press. Mix in the quark, and stir until combined. Add the egg, and season to taste with salt and pepper. Mix in the avocado, and garnish with the parlsey.

3.

This tastes great on fresh country bread, topped with thinly sliced radish and watercress.
