- ¼ cup cream cheese
- ¼ cup natural Yogurt (3.5 % fat)
- Curry powder
- 1 Tbsp lemon juice
- 3 ½ ozs large Eggplant (Italian deli product, dried and roughly chopped)
- 1 Tbsp parsley (roughly chopped)
- 8 square Whole grain crackers (ready-made product)
- 8 black Olives
- pink peppercorns
- parsley (to garnish)

Preparation steps
1.
Mix together the cream cheese, yogurt, salt, ground black pepper, curry and lemon juice.
2.
Carefully stir the aubergines and parsley into the cream cheese mixture and season with salt and ground black pepper.
3.
Place a teaspoon of the cream onto the crackers and serve garnished with an olive, pink peppercorns and parsley.
