- For the cheese sauce
- 1 Tbsp butter
- 2 tsps Pastry flour
- 250 milliliters milk
- 80 grams cream cheese
- Salt freshly ground pepper
- 1 pinch grated Nutmeg
- 3 Tbsps dry white wine

Preparation steps

For the cheese sauce, melt butter in a pan. Add flour and sauté briefly. Stirring constantly, pour in milk and bring slowly to a boil. Stir in cheese until melted. Season with salt, pepper, nutmeg and wine. Keep warm.

Rinse asparagus and snap off ends. Cook asparagus in salted boiling water, 10-12 minutes. Blanch tomatoes briefly in boiling water, then rinse with cold water and peel. Halve tomatoes, remove seeds and finely chop.

Rinse chervil, shake dry, strip leaves from stems and coarsely chop. Drain asparagus and serve topped with cheese sauce and diced tomatoes. Garnish with chervil.
