½ cube Yeast (21 grams) (approximately 3/4 ounce)
1 tsp sugar
450 grams Pastry flour
4 Tbsps olive oil
Sea salt
600 grams green Asparagus
250 grams Cherry tomatoes
400 grams Gorgonzola
olive oil (for brushing)
150 grams Smoked ham (sliced)
1 handful Arugula
freshly ground peppers

Preparation steps

1.

For the dough: Crumble the yeast into a bowl and then stir in the sugar and 200 ml (approximately 3/4 cup) lukewarm water until smooth. Add the flour, olive oil and 1 teaspoon salt and knead until smooth. Cover and let rise for about 1 hour in a warm place.

Preheat the oven to 200°C (approximately 400°F) with 1-2 large baking sheets (or pizza stones) inside.

Peel the asparagus and cook in salted boiling water for about 6 minutes, until tender. Shock in ice water and pat dry. Rinse the tomatoes and cut in half. Slice the cheese. 

4.

Divide the dough into 4 portions and roll out into thin circles. Place on a sheet of parchment paper and brush with oil. Arrange the cheese over the center and top with asparagus and tomatoes. Carefully transfer to the oven.

5.

Bake until golden brown, around 15-20 minutes.

6.

Remove from the oven and cover with ham and arugula. Season with salt and pepper to serve.
