- 20 grams dried Wood Ear Mushrooms
- 20 grams dried Tongu mushroom
- 150 grams Glass noodles
- 500 grams Pork (from leg)
- 8 scallions
- 1 red chili pepper
- 2 garlic cloves
- 2 centimeters fresh ginger
- 1 Tbsp cornstarch
- 2 Tbsps Peanut oil
- light soy sauce

Preparation steps

Soak dried mushrooms according to package instructions. Strain mushrooms through a fine sieve, collect the liquid. Cook glass noodles according to package instructions. Drain well and chop with scissors into smaller pieces. Rinse meat, pat dry and cut into bite-sized slices. Rinse and dry scallions, cut diagonally into pieces. Rinse and dry chile pepper, chop. Peel garlic and ginger, chop finely.

Combine meat with cornstarch. Heat 1-2 tablespoons of oil in wok or pan and cook meat until browned. Take out meat. Saute mushrooms, scallions, chile pepper, garlic and ginger for 2-3 minutes in remaining oil. Deglaze pan with water and 2-3 tablespoons of soy sauce. Combine noodles with meat mixture. Serve.
