- 3 ½ cups fish stock (or vegetable stock)
- 1 unwaxed lemon (sliced)
- 1 bay leaf
- ½ bunch Thai basil (chopped)
- ½ tsp yellow Curry paste
- 2 ½ cups Squid (ready to cook)
- 1 ⅓ cups Sardine (ready to cook)
- 2 Tbsps lemon juice
- Fish sauce
- light soy sauce
- 3 ½ ozs Glass noodles
- 2 red chili peppers (cut into rings)
- Lemon balm (to garnish)

Preparation steps
1.
Place the stock, lemon slices, bay leaf and the basil in a pot and stir in the curry paste. Bring to the boil, add the squid and the fish and simmer for around 5 minutes.
2.
Season with lemon juice, fish sauce and soy sauce and cut up the noodles. Add the noodles to the soup and serve garnished with chilli and lemon balm.
