- ¼ cup Nut oil
- 4 cups Lamb shoulder (diced)
- 3 sticks Celery (sliced)
- 2 ¼ cups tomato passata
- 1 Tbsp paprika
- 1 Tbsp Harissa
- 1 tsp honey
- 1 cup pitted green olives
- salt
- peppers

Preparation steps
1.
Coat the lamb in half of the oil and season generously.
2.
Heat a large casserole dish over a moderate heat until hot and seal the lamb in batches until golden brown in colour all over.
3.
Remove to a slow cooker when finished and reduce the heat under the casserole dish a little.
4.
Add the remaining oil and saute the celery with some salt and paprika for 2-3 minutes, stirring occasionally. Add the harissa, honey and passata and stir well.
5.
Pour into the slow cooker and add the green olives before stirring thoroughly. Cover with a lid and cook on a medium setting for 5 hours until the lamb is tender.
6.
Adjust the seasoning to taste before pouring into a serving dish.
