Ingredients
- Ingredients
- 500 grams green Asparagus
- 1 Red chili pepper
- 1 shallot
- 4 Tbsps sesame oil (light)
- 1 tsp brown sugar
- 100 milliliters Rice wine
- soy sauce (light)
- 4 Steak fillet (about 180 grams or approximately 6 ounces)
- freshly ground peppers
- 1 Lime (juice and zest)
- 1 handful fresh Fresh herbs (such as cilantro, Thai basil, fine celery leaves)
Preparation steps
Peel the bottom third of the asparagus and cut diagonally into 3-4 cm long pieces. Rinse the chile pepper and cut into rings. Peel the shallot and also cut into thin rings. Briefly sauté the asparagus, chile and shallot together in 2 tablespoons of hot oil. Sprinkle with sugar and drizzle with rice wine. Add 1-2 tbsp soy sauce, cover and simmer for about 5 minutes on low heat.
Rinse the steaks, pat dry and saute in the remaining oil, about 1-2 minutes on each side. Remove from heat, sprinkle with a little soy sauce and pepper, then saute again for 4-5 minutes until done (cook longer or shorter depending on the desired doneness).
Squeeze the lime juice and zest over the asparagus.
Arrange the asparagus on plate. Slice the steak over it and serve garnished with fresh herbs.
