500 grams green Asparagus
1 Red chili pepper
1 shallot
4 Tbsps sesame oil (light)
1 tsp brown sugar
100 milliliters Rice wine
soy sauce (light)
4 Steak fillet (about 180 grams or approximately 6 ounces)
freshly ground peppers
1 Lime (juice and zest)
1 handful fresh Fresh herbs (such as cilantro, Thai basil, fine celery leaves)

Preparation steps

Peel the bottom third of the asparagus and cut diagonally into 3-4 cm long pieces. Rinse the chile pepper and cut into rings. Peel the shallot and also cut into thin rings. Briefly sauté the asparagus, chile and shallot together in 2 tablespoons of hot oil. Sprinkle with sugar and drizzle with rice wine. Add 1-2 tbsp soy sauce, cover and simmer for about 5 minutes on low heat.

Rinse the steaks, pat dry and saute in the remaining oil, about 1-2 minutes on each side. Remove from heat, sprinkle with a little soy sauce and pepper, then saute again for 4-5 minutes until done (cook longer or shorter depending on the desired doneness).

Squeeze the lime juice and zest over the asparagus.

Arrange the asparagus on plate. Slice the ​steak over it and serve garnished with fresh herbs.
