- 1 ripe Avocado
- 4 scallions
- Edible flowers (such as Pansies, watercress ...)
- salt
- freshly ground peppers
- olive oil
- ½ bunch Arugula
- White vinegar
Preparation steps

Peel the avocado, remove the seed, and cut crosswise into thick slices. Rinse the arugula and cut into thin strips. Trim and slice the scallions into thin strips. Add half of the vinegar to a glass, mix in 6 of the flowers, and let infuse for 30 minutes.

Mix the avocado with the scallions, arugula, 3 tablespoons of the olive oil, and 2 tablespoons of the flower infused vinegar. Season to taste with salt and pepper. Garnish with the remaining flowers, and serve with fresh white bread.
