1 Rinse and spin dry arugula and sprouts, arrange on plates.
2 Rinse tomato, cut in half, remove seeds and chop finely.
3 Combine tomato juice with oil and vinegar, season with salt, pepper and sugar.
4 Peel avocado, pit and cut into cubes. Toss with tomato dressing.
5 Arrange diced tomatoes on top of salad, drizzle with avocado dressing. Serve.
