2 Tbsps Lime juice
1 tsp Maple syrup

Preparation steps

Rinse, trim, and halve the tomatoes. Rinse, trim, and thinly slice the scallions. Rinse and dry the arugula.

Mix the vinegar with the lime juice, maple syrup, and the oil. Season to taste with salt and pepper. Mix the dressing with the tomatoes, arugula, and the scallions. Toss to combine, then transfer to plates. Sprinkle with a little fleur de sel and freshly ground pepper, and serve.
