Rinse the apricot and pat dry. Halve the apricot and remove the stone. Cut the apricot halves into wedges. Mix the chilled apricot juice with the ginger ale and the lemon juice until thoroughly combined.
Place the ice cubes in a freezer bag and seal tightly. Crush the ice in the bag using a small rolling pin. Fill highball glasses with 3 tablespoons of the crushed ice. Add the apricot juice mixture to the glasses, garnish with the apricot wedges, and serve the drink with a straw.
