For the wonton dough
2 ½ cups all-purpose flour
1 tsp salt
1 egg (beaten)
cup water
For the filling
3 large Apple (peeled, cored and diced)
2 Tbsps butter
½ tsp ground cinnamon
½ tsp Chinese 5 spice powder
2 Tbsps brown sugar
½ cup Golden raisins
vegetable oil (for deep-frying)
To serve
Vanilla ice cream
sliced, green Apple
caster sugar

Preparation steps

Mix the flour, salt, egg and water in a mixing bowl until you have a smooth dough. You may need to add a little more water but be careful the dough doesn't become too wet. Turn the dough onto a floured board and knead for 10 minutes then place in a clean bowl, cover and leave to rest for 30 minutes.

For the filling, place the apples and butter in a pan over a gentle heat until the apples start to soften then add the remaining ingredients and cook until the apples are completely soft. Turn into a clean bowl and let cool completely.

Turn the dough onto a floured board and divide it into four pieces. Roll each piece out as thinly as possible and cut into a neat square about 10" / 25 cm x 10" / 25cm then cut each piece into quarters so you have 16 pieces of dough, each about 5" / 12cm square.

Place a little of the filling in the middle of the dough square then moisten the edges and gather up to make a parcel, twisting a little to make a good seal. Keep the rest of the dough covered while you make each wonton to prevent it drying out.

Heat about 3" / 7.5cm oil in a deep pan and gently fry the wontons in batches until golden brown. Drain on kitchen paper and serve warm with vanilla ice cream garnished with apple slices and dusted with a little sugar.
