1 lemon (organic)
150 grams sugar
150 milliliters dry Sparkling wine
1 pinch ground anise seed
500 grams tart, red-skinned Apple
2 egg whites
4 small pomegranates

Preparation steps

1.

Rinse lemon with hot water. Remove zest with a vegetable peeler in long strips and squeeze juice from lemon. In a pot, bring lemon juice, zest, sugar, sparkling wine and aniseed to a boil over low heat.

Rinse, halve and core apples. Chop apples coarsely and add to pot with lemon and wine syrup. Cook over low heat, stirring occasionally, until apples are soft, about 10 minutes. Remove lemon zest and mash apples well with syrup. Let cool.

Whip egg whites until stiff and fold into mashed apples. Pour mixture into a shallow metal bowl and freeze 30 minutes. Whisk mixture well. Repeat whisking process every 15 minutes until creamy, approximately 3 hours.

4.

To serve, rinse pomegranates and cut skin lengthwise in quarters (but do not cut through). Break pomegranate into quarters. Place pomegranate quarters on plates, breaking them apart slightly and top each with a scoop of apple ice cream.
