Preparation steps

Rinse and peel apples, quarter and core. Drizzle with a little lemon juice.

Whisk sugar, butter and egg until fluffy. Add flour and process to a smooth pastry. Refrigerate for about 45 minutes. Butter springform pan and sprinkle with sugar. Heat up on the stove until sugar caramelizes slightly. Arrange apple quarters in the pan. Roll out pastry and place over apples, pressing lightly the edges. Bake in preheated oven at 180°C (approximately 350°F) for about 25-30 minutes or until golden brown. Remove from the pan and loosen the edges with a knife. Invert onto a cake plates. Brush still warm tart with apricot jam and dust with sugar. Serve with whipped cream.
