- For the batter
- 125 grams Pastry flour
- 225 milliliters milk
- 3 eggs
- 1 pinch salt

- 8 shallots
- 250 grams mixed Mushrooms (such as shiitake, mushrooms, chanterelles)
- 3 Tbsps sunflower oil
- 1 tsp freshly chopped thyme
- Arugula (for garnishing)
Preparation steps

For the batter: mix milk with flour and a pinch of salt until smooth, add eggs and allow batter to rest for 20 minutes.

Preheat the oven to 220 ° C top heat.

Peel shallots and cut into rings. Clean mushrooms and cut into slices. Heat oil in a pan and saute shallots for about 8 minutes or until golden brown, stirring. Add mushrooms and saute for another 6 minutes. Season with salt and pepper and sprinkle with thyme. Place mushroom mixture into a baking dish and pour batter over it. Bake in preheated oven at 220°C (aproximately 425°F) for about 10 minutes or until golden brown.

Invert onto a sercing plate and garnish with arugula. Serve.
