3 ozs unfiltered Apple juice
3 Tbsps lemon juice
1 Vanilla bean
18 ozs Vanilla yogurt
1 Tbsp Nut
5 tsps Granola
1 tsp Pumpkin seed

Preparation steps

1.

Rinse apples, drain and wipe dry and cut into quarters, remove cores and cut into cubes.

Soak gelatin in cold water.

3.

Place apples, apple juice, lemon juice, and 1/3 cup water in a pot. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Add vanilla beans and seeds to pot. Bring to a boil and simmer for 2 minutes.

4.

Squeeze excess water from gelatin. Remove vanilla pod from pot. Dissolve gelatin in apple mixture and let cool slightly. Pour mixture into 4 glasses and refrigerate for at least 1 hour.

5.

Spread an even layer of vanilla yogurt over apple layer. To serve, chop nuts coarsely and mix with granola and pumpkin seeds and sprinkle mixture over yogurt.
