- For cake
- 250 grams butter
- 200 grams brown sugar
- 300 grams Pastry flour
- 1 Tbsp Cocoa
- 3 tsps Baking powder
- 4 eggs
- 50 grams ground Walnut
- 50 grams ground almonds
- 80 grams candied ginger (finely chopped)
- 3 Tbsps Ginger lemonade
- 1 Tbsp Rum
- butter (to grease the pan)
- For topping
- 200 grams powdered sugar
- 3 Tbsps lemon juice
- Almond slivers (for garnish)
- raisins (for garnish)
- Walnut (for garnish)

Preparation steps

Beat butter with sugar and eggs until fluffy. Stir together flour, cocoa, baking powder, and ground nuts. Mix the dry ingredients into the butter mixture. Stir in the candied ginger, rum, and ginger beer. Grease the loaf pan with butter. Fill the loaf pan with batter and bake in a preheated 180°C (approximately 350°F) for about 50 to 60 minutes.

Let cake cool on a wire rack for about 5 minutes. Remove cake from the loaf pan and continue to cool.
For topping, mix powdered sugar and lemon juice and pour over the cake. Sprinkle the wet glaze immediately with nuts and raisin, if desired.
