2 ozs dried soft apricots (4-6 dried soft apricots)
1 ¾ ozs dried Apple ring
1 oz ground flaxseed (2 TBSP.)
3 ½ ozs Oat Milk
4 ¾ ozs Coconut oil
2 ¾ ozs apple sauce (5 tablespoons; unsweetened)
6 ½ ozs old fashioned Oats
4 ozs ground almonds
¾ oz Carob (3 TSP)
1 tsp baking soda
½ Vanilla bean
½ tsp Ground cinnamon
1 pinch salt

Preparation steps

Finely dice apricots and apple rings. Mix flaxseed with oat drink and dried fruit. Melt coconut oil over low heat and pour in, add applesauce and let swell for about 10 minutes.

Meanwhile, cut the vanilla bean in half lengthwise and scrape out the pulp. Mix oatmeal with almonds, carob, and baking soda. Add vanilla pulp, cinnamon and 1 pinch of salt. Then mix together oatmeal and flaxseed mixture.

Remove approx. 1 tablespoon of the mixture at a time (e.g. with an ice cream scoop), form into 20 balls, place on a baking tray lined with baking paper, and press down lightly. Bake in a preheated oven at 180 °C / 350 ˚F for about 15 minutes until golden brown.
