500 grams Pastry flour
1 cube Yeast
¼ l lukewarm milk
100 grams sugar
1 egg
1 pinch salt
½ untreated lemon (zested)
1 tsp Ground cinnamon
60 grams butter

2 kilograms Apple
2 lemons (juiced)
125 grams slivered almonds

Preparation steps

Put the flour in a mixing bowl, make a well in the center and crumble the yeast into it. Pour in a little milk and stir in a little flour from the edge. Cover and let rise for about 15 minutes. Add the remaining milk with half the sugar, egg, salt, lemon zest and half the cinnamon. Place the butter on top in small flakes and knead to a smooth dough. Cover and let rise in a warm place for another 30 minutes.

Grease the baking sheet and sprinkle with breadcrumbs. Knead dough again and roll out onto the baking sheet. Preheat the oven to 200°C (approximately 400°F). Peel apples, cut into quarters, remove seeds and cut into small slices. Immediately sprinkle with lemon juice and mix in remaining sugar and cinnamon. Arrange the apple slices and almonds on the dough and bake the cake for about 40 minutes. Serve warm.
