Almond Hedgehog Cheeseball

- 400 grams almonds (peeled)
- 400 grams cream cheese
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- Lettuce
- Cherry tomatoes
Preparation steps
To peel almonds, place almonds in a bowl and pour boiling water to cover almonds. Set aside to soak for a few minutes, until skin begins to peel.
Rinse almonds in a colander, drain and rinse briefly.
Peel almonds. Grasp rounded end of almong with thumb and forefinger and press forward firmly so that pointed end of almond penetrates peel and slides out of peel. Repeat steps until all almonds are peeled.
Mix cream cheese, lemon juice and salt and pepper. Grease a rounded bowl with oil and line with lettuce leaves with tops of lettuce leaves fanning outward and lettuce stems pointing inward. Shape cream cheese into a rounded ball and place in the center of bowl.
Press rounded ends of peeled almonds into cheese, so that almonds are almost touching and surface of cheese ball is barely visible.
To serve, decorate plate with halved cherry tomatoes.
