- 2 scallions
- 1 fresh ginger (walnut-sized piece)
- 1 lemon
- 250 grams Zucchini
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- 1 garlic clove
- 2 Tbsps White vinegar
- 3 Tbsps Vegetable broth
- sugar

Preparation steps

Rinse, trim and cut scallions in half lengthwise. Cut white and light green parts into very fine strips and transfer to a bowl.

Peel and thinly slice ginger. Rinse lemon with hot water and cut into slices.

Rinse, trim and cut zucchini diagonally into thin slices. In a pan, sauté zucchini slices in olive oil, about 2 minutes per side. Season with salt and pepper and add to the bowl with scallions. In the oil remaining in the pan, sauté ginger and lemon slices briefly on both sides. Peel and press garlic through a garlic press into the pan. Add vinegar and broth and season with salt, pepper and a pinch of sugar. Mix with zucchini and scallions and divide among plates.
