8 small Zucchini
2 Tbsps olive oil

300 grams Peas
1 garlic clove
2 Tbsps butter
½ organic lemon (juiced and zested)
1 handful mint

Preparation steps

Preheat the broiler in the oven.

Rinse and trim the zucchini and cut into quarters lengthwise. Place in a baking pan or baking dish and drizzle with the olive oil. Season with salt and pepper and cook for about 10 minutes under the broiler, turning from time to time.

Blanch the peas in salted water for about 2 minutes, rinse cold and drain. Peel the garlic and chop finely. Toss in a pan with the peas in some melted butter and then remove from the heat. Drizzle with lemon juice, shower with the zest and the mint leaves and season with salt and pepper.

4.

Pour the lemon peas over the zucchini and serve immediately.
