7 ozs butter
3 ½ ozs sugar
1 egg
1 Lime (Juiced and finely grated)
Pastry flour (for dusting)
6 ozs powdered sugar
2 ozs chopped Pistachio

Preparation steps

1.

Sift flour over work surface. Make a well in the center and add pieces of cold butter, sugar, egg, 1 tablespoon lime juice and lime zest. Quickly knead into a smooth dough until dough no longer sticks to hands. Cover with plastic wrap and refrigerate for about 30 minutes.

Preheat oven to 375°F. Line a baking sheet with parchment paper.

On a floured surface, roll out the dough into a cylinder and cut into about 50 pieces. Roll into strands, each about 2-3 inches. For each cookie, twist two strands around each other. Form into a circle and press ends together and tuck underneath cookie. Place on a baking sheet lined with parchment paper. Bake for 15-20 minutes. Let cool on a wire rack.

Mix powdered sugar with remaining lime juice into a thick icing. Drizzle 1-2 teaspoons over cookies and sprinkle with pistachios. Allow icing to set. Arrange on a plate and serve.
