Butter Cookies with Icing
Heat the oven to 150°C (130° fan) 300°F gas 2. Grease a large baking tray.
Beat the butter and sugar until soft and creamy.
Sift in the flour, rice flour and salt and mix with your hands to a smooth dough.
Roll out on a lightly floured surface and cut into star shapes using a small star-shaped cookie cutter.
Bake for 15-20 minutes until pale golden. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
To decorate: sift the icing sugar into a bowl and gradually beat in enough lemon juice to form a thick coating consistency.
Spread the icing over the stars and leave to set.
