1 generous pinch lemon zest
2 tablespoons cocoa powder

Preparation steps

Sift the flour with the baking powder on the work surface. Make a well in the middle. Add the cold butter cut into pieces, the sugar, the egg and the lemon zest to the middle well. Knead to a smooth dough that no longer sticks to your hands. Divide the dough in half and mix the cocoa with one half. Wrap the dough pieces in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 180°C convection (approximately 350°F). Line a baking sheet with parchment paper.

Roll out each of the doughs on a floured surface to 4-5 mm thick (approximately 1/5 inch) and cut out circles of 6 cm diameter (approximately 2 inches). Place onto the lined baking sheet and bake 10-12 minutes until golden brown. Remove from the baking sheet and allow to cool.

For decoration: Beat the egg white with 1 teaspoon of lemon juice until stiff. Gradually add the powdered sugar and continue beating to a glossy, tough cast. Color as desired, then use it to decorate the cooled cookies. Let dry slightly before serving, decorated with sugar candies as desired.
