- 4 skinless Chicken breasts (trimmed)
- 1 ½ cups grated Mozzarella
- 8 slices Pancetta
- 2 Tbsps olive oil
- 2 ½ cups chicken stock
- ¼ cup cream
- 2 cups cherry Heirloom tomato
- 1 Sage
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the oven to 190°C(170° fan)|375F|gas 5.
2.
Butterfly the chicken breasts with a sharp knife. Stuff with the mozzarella and season with salt and pepper.
3.
Wrap well with the pancetta and drizzle with olive oil. Season with salt and pepper and place in a roasting tray.
4.
Pour the stock around the chicken and roast for 40-45 minutes until the breasts are cooked through.
5.
Remove from the oven and stir through the cream. Garnish with cherry tomatoes and sage leaves before serving.
