Griddled Chicken with Lime Add sliced lime tucked under the chicken for extra freshness
Mix together the chilli, ginger, garlic, huoc nam and sugar with some lime juice and taste - you need a balance of hot, sharp and sweet.
Toss the chicken in the marinade and refrigerate for 1 hour.
Wrap the chicken in the leaves. Heat a griddle pan until hot.
Griddle the parcels over the heat until charred and the chicken is cooked through.
You can reduce any remaining marinade in a small saucepan to serve as a dipping sauce.
