Winzer Style Chicken

- 1 Roasted Chicken (ready to cook, 1.2 kg)

- 250 grams blue Grape
- 250 grams green Grape
- 125 grams blanched almonds
- 2 yellow onion
- 1 bay leaf
- 500 milliliters Chicken broth
- 200 milliliters dry white wine
- 200 milliliters Whipped cream (at least 30% fat content)
Preparation steps
Preheat oven to 200°C (approximately 400°F.) Rinse chicken, pat dry and rub inside and out with salt and pepper. Rinse, halve and seed grapes. Mix grapes with almonds and fill into chicken.
Pin together chicken's abdominal opening with toothpicks and tie with kitchen twine. Peel onions and cut lengthwise into slices. Lay chicken (breast side down) in roasting pan, add bay leaf and onion and bake about 60 minutes in preheated oven.
Gradually pour broth on chicken during cooking, let broth evaporate and turn chicken after 40 minutes of cooking. Remove finished chicken from oven, transfer to plate and keep warm.
Mix juices with wine, drain through sieve into large pot, pour in cream and rapidly let boil down to about half original volume. Season with salt and pepper. Arrange chicken, grapes and vegetables on plate and serve with rich sauce.
