- 1 pkg Wild rice (175 g | 6 oz)
- 2 medium carrots (peeled and diced)
- 1 cup diced Zucchini
- ⅔ cup sweet, red Bell pepper (finely chopped)
- ½ cup chopped onions
- 2 Tbsps Canola oil
- non-stick cooking spray
- 6 paper cups (175 g | 6 oz each)
Preparation steps
1.
In a large saucepan, combine rice mix, contents of seasoning packet and water according to package instructions. Bring to a boil. Add carrots. Reduce heat; cover and simmer for 25 to 30 minutes or until water is absorbed and rice is tender.

Meanwhile, heat the oil in a skillet and saute the zucchini, red pepper, and onion until tender crisp.

Gently stir saute vegetables into rice mixture.
4.
Lightly coat the inside of the paper cups with cooking spray. Fill each cup with the rice and vegetable mixture, pressing down to pack.
5.
Invert filled cups over a serving plate and let stand for 2 to 3 minutes. Gently tap the cups several times and lift off the paper cups. Serve.
