For the chicken
79 ozs chicken
¼ cup butter
5 rashers fatty Bacon (streaky, American)

1 large Apple (chopped)
1 Tbsp chopped Sage
1 small onion (chopped)
4 ozs fresh breadcrumbs
1 Tbsp chopped parsley
1 ½ cups Sausage meat

Preparation steps

1.
Heat the oven to 190°C (170° fan).
2.
Put the chicken in a roasting tin and season with salt and pepper.
3.
For the stuffing: mix together all the ingredients.

Pack the stuffing into the chicken - not too tightly, and secure the neck flap with a wooden cocktail stick.

Rub the butter all over the chicken and lay the bacon on the breast and legs.

Cook for 20 minutes per 450g|1lb, plus 20 minutes extra, basting from time to time with the juices in the tin. To test if the chicken is cooked -insert a skewer or knife into the chicken where the leg joins the body - the juices should run clear with no trace of pink. If necessary, return the chicken to the oven for more roasting, checking it every 5 minutes.

Add the apple quarters for the last 20 minutes of cooking time, basting with the pan juices, until tender.

Cover the chicken and let it rest for 20 minutes before carving. Garnish with parsley.
