- For the potatoes
- 4 large potatoes (such as King Edward or Maris Piper, scrubbed)
- 2 Tbsps olive oil
- salt
- For the filling
- 2 ½ Tbsps butter
- 4 rashers smoked Bacon
- 1 medium Zucchini (finely diced)
- 5 ozs Tête de Moine cheese (or similar melting cheese)

Preparation steps
1.
Preheat the oven to 200°C | 400F | gas 6.
2.
Rub the potatoes all over with olive oil, prick the skins a few times with a fork and sprinkle generously with salt. Bake in the oven for at least 1 hour until completely cooked.
3.
For the filling: once the potatoes are cooked, heat the butter in a pan and cook the bacon until the fat 3starts to run.
4.
Add the diced courgette and cook until golden.
5.
Remove the top third of the potatoes, pack the insides down with the back of a teaspoon and spoon the bacon/courgette mix inside.
6.
Add the cheese and return to the oven until the filling is hot and the cheese melting. Serve immediately.
