- For the soup
- 1 onion (diced)
- 3 Tbsps butter
- 8 garlic cloves (halved)
- 2 Tbsps flour
- 3 ½ cups Meat stock
- ½ cup Sour cream
- For the fish
- 4 Red mullet fillets (ready-to-cook, with skin)
- 2 Tbsps olive oil
- 2 ½ Tbsps butter
- Plus
- lemon juice
- Nutmeg
- Garlic Scapes (to garnish)

Preparation steps
1.
Fry the onion in the butter. Add the garlic and dust with the flour. Deglaze with the stock and simmer on a low heat for around 15 min, stirring occasionally.

Season the fish with salt and ground black pepper and fry in hot oil, skin side down for around 2 min. Turn, then remove from the heat and add the butter. Leave to steep.
3.
Add the sour cream to the soup and puree well. Season with lemon juice, salt, ground black pepper and nutmeg and serve in preheated bowls. Garnish with garlic flowers and serve each bowl with one fish fillet cut in half.
