½ cube fresh Yeast (21 grams) (approximately 3/4 ounce)
250 grams Pastry flour
1 pinch sugar
1 pinch salt
2 Tbsps olive oil
15 grams baking soda
4 Tbsps white Sesame seeds
200 grams white Couverture
150 grams red and white bonbon

Preparation steps

1.

Dissolve the yeast in 100 ml (approximately 1/2 cup) lukewarm water. Mix the flour with the sugar and salt in a bowl, make a well in the middle, add the yeast mixture and oil. With your hands, quickly knead until smooth. Let rise in a warm place for 45 minutes.

Preheat the oven to 160°C (approximately 325°F). Shape the dough into a log and cut into 20 pieces. Shape each piece into about 20-25 cm (8-9 inch) long thin rods.

Dissolve the baking soda in 500 ml (approximately 2 cups) boiling water, dip the bread rods in the solution for 30-60 seconds, remove, drain on paper towels and sprinkle with sesame seeds. Bake for about 25-30 minutes.

Remove and let cool.

Chop the chocolate, melt over a hot water bath, remove from the heat and let cool until lukewarm. Chop the candy.

6.

Dip the sticks in white chocolate, drain, toss in the candy and set aside until dry.
