- 1 bunch mixed Fresh herbs (such as borage, chervil, sorrel, burnet, parsley, dill)
- 250 grams Crème fraiche
- salt
- freshly ground peppers
- 1000 grams white Asparagus
- sugar
- salt
- 1 tsp butter
- 2 Tbsps lemon juice
- 1 Asparagus

Preparation steps
1.
For the sauce, chop herbs finely, mix with creme fraiche in a bowl and season with salt and pepper.

Peel asparagus and remove slightly woody ends.
3.
Bring water to a boil in a large pot and season with salt, a pinch of sugar, a little butter and lemon juice. Add asparagus to the pot (asparagus tips should not be covered with water) and simmer for 14-17 minutes for thin stalks or 20 minutes for thick stalks.
4.
Test asparagus to see if fully cooked by removing asparagus from water and placing it on a fork. Asparagus should be cooked but still be al dente.
5.
Arrange asparagus on a plate, cover with the sauce and garnish with fresh herbs. Serve immediately.
