Preparation steps

Cook asparagus according to the basic recipe. Rinse, trim and cut scallions diagonally into rings. Slice chives crosswise into rings. In a pan, sauté scallions and chives in melted butter, stirring.

For the salad, tear curly endive into bite-sized pieces. Peel and chop hard-boiled eggs. Make vinaigrette: Whisk vinegar with oil and season with salt and pepper. Drizzle salad with vinaigrette. Sprinkle with chopped eggs and serve with smoked duck breast and asparagus. Sprinkle asparagus with scallions and chives.
