- ¾ cup gluten-free all purpose flour
- ½ tsp xanthan gum
- 1 cup yellow Cornmeal
- ⅓ cup sugar
- 2 tsps gluten-free Baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ⅝ cup milk
- ½ tsp White vinegar
- ½ cup Ricotta cheese
- ⅓ cup Feta (chopped)
- ½ cup butter (melted)
- 2 large eggs (lightly beaten)
- 3 Tbsps Pine nuts
- To serve
- plain Yogurt

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Place 12 paper cases in a muffin tin.
2.
Stir together the flour, xanthan gum, cornmeal, sugar, baking powder, bicarbonate of soda and salt in a mixing bowl until well combined.
3.
Add the milk, vinegar, ricotta cheese, feta, butter and eggs, mixing to combine well after each addition.
4.
Spoon into the paper cases and sprinkle with pine nuts.
5.
Bake for 18-22 minutes, until lightly browned on top. Cool in the tin for 5 minutes, then serve warm with yoghurt.
