- ⅔ cup caster sugar
- 2 Tbsps light corn syrup
- 1 Tbsp hot water
- 3 large Apple (peeled, cored and cut into wedges)
- 2 tsps ground cinnamon
- 2 Tbsps raisins
- 1 ¾ cups gluten-free self-rising flour
- 1 tsp gluten-free Baking powder
- ½ cup butter (softened)
- 2 large eggs
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20-23cm| round cake tin.

Heat 25g|1/8 cup sugar, golden syrup and water in a frying pan. Swirl (do not stir) the liquid until the sugar dissolves and a caramel is formed.

Add the apple segments to the pan and sprinkle with 1 teaspoon cinnamon. Simmer until the apples soften slightly. Remove from heat, stir in the raisins and cool for 5 minutes.

Add the apple segments, raisins and caramel to the cake tin and leave to cool completely.

Sift the flour, baking powder and remaining cinnamon into a mixing bowl. Stir in the remaining sugar.

Add the butter and eggs and beat until well combined.

Pour the mixture over the apple segments, ensuring that all the apple is covered.
8.
Bake for 20-30 minutes until golden brown. Insert a skewer in the centre of the cake; if it comes out clean, the cake is ready.
