- 2 yellow Bell pepper (one-quarter sliced, the rest diced)
- ½ Cucumber (peeled and diced)
- 1 Red onion (finely diced)
- 2 Tbsps Basil (chopped)
- 1 ⅔ cups vegetable stock
- ⅜ cup white wine
- Chili powder (to taste)
- Sour cream (to serve)
- salt
- freshly ground peppers

Preparation steps
1.
Mix the melon and vegetables together, and then add the vegetable stock. Add the white wine and season to taste with pepper and chile powder.

Leave to stand in the refrigerator for at least 1 hour.

Serve garnished with strips of pepper and basil. Serve with sour cream if desired.
