- ¾ cup Pine nuts
- 4 Tbsps unsalted butter
- 4 Tbsps light brown sugar
- 1 Vanilla bean
- 1 lemon (juice)
- 1 tsp ground cinnamon (optional)
- 32 ozs yellow and red Candied cherry (pitted)
- 16 ozs Strawberries
- ⅞ cup Red wine
- To decorate
- Strawberry Leaf lettuce variety

Preparation steps
1.
Toast the pine nuts in a dry frying pan until lightly browned. Set aside to cool.

Melt the butter in the frying pan. Add the sugar and vanilla pod and stir until the sugar has dissolved.
3.
Add the cherries and strawberries and cook for 3-5 minutes, stirring occasionally, until the fruits are tender and heated through. Add a squeeze of lemon juice, stir, then remove from the heat. Stir in the cinnamon if using.
4.
Remove the fruit with a slotted spoon and place on a serving plate. Sprinkle with the pine nuts.
5.
Add the wine to the juices in the pan and bring to a boil. Cook until the liquid is reduced and syrupy. Allow to cool and pour over the fruit. Decorate with the vanilla pod and strawberry leaves.
