2 Chicken thigh (skinned, deboned and chopped)
2 heads Chicory (separated into leaves and chopped)
½ Orange (juiced)
2 Tomatoes (cored and diced)
3 Tbsps Peanuts

Preparation steps

Heat the oil in a pan and briskly fry the chicken until golden. Continue to cook until cooked through, 4-5 minutes.

Add the chicory and cook until wilted, then stir in the orange juice and tomatoes.

Spoon onto plates and sprinkle over peanuts and seasoning, then serve
