- 2 Chicken thigh (skinned, deboned and chopped)
- 2 heads Chicory (separated into leaves and chopped)
- ½ Orange (juiced)
- 2 Tomatoes (cored and diced)
- 3 Tbsps Peanuts
- salt
- peppers

Preparation steps
1.
Heat the oil in a pan and briskly fry the chicken until golden. Continue to cook until cooked through, 4-5 minutes.
2.
Add the chicory and cook until wilted, then stir in the orange juice and tomatoes.
3.
Spoon onto plates and sprinkle over peanuts and seasoning, then serve
