- 2 Chicken breasts (skinned and cubed)
- Saffron (infused in 2 tbsp water)

- 1 head Chicory (separated)
- 1 Avocado (stoned and flesh chopped, tossed with 1 tsp lemon juice)
- 2 Tbsps Pine nuts (toasted)
- 2 Tbsps raisins
- 2 Tbsps Sesame seeds
- 2 Tbsps extra-virgin olive oil

Mix the chicory and avocado with a little mayonnaise, then pile all the ingredients between thick white sandwich bread.
Preparation steps

Heat the oil in a pan and fry the chicken until golden. Add the saffron-infused water and toss to coat, then season.

In a serving bowl arrange the chicory, avocado, pine nuts and raisins and drizzle with extra virgin olive oil.

Sit the chicken on top and sprinkle over the sesame seeds.
