- 2 Broccoli (prepared into florets)
- 1 ½ cups Bean sprout
- Radish (finely sliced into discs)
- ¼ cup extra-virgin olive oil
- 2 Tbsps Golden raisins
- 1 Tbsp whole almonds
- 1 Tbsp sliced almonds
- salt
- Black pepper

Preparation steps
1.
Bring a large saucepan of salted water to the boil. Blanch the broccoli for 2 minutes, then remove and refresh in iced water.
2.
Blanch the beansprouts for 10 seconds then refresh in the iced water as well.
3.
Drain the vegetables then combine with the radish slices in a large mixing bowl. Add the extra-virgin olive oil and some seasoning and toss well to combine.
4.
Add the sultanas, flaked almonds and whole almonds and toss again. Spoon onto serving plates.
5.
Serve immediately.
