- For the cupcakes
- 2 ripe Banana
- 3 eggs
- ⅔ cup butter
- ⅔ cup sugar
- 1 ¼ cups all-purpose flour
- 1 tsp Baking powder
- ½ cup Walnut (chopped)
- For the topping
- 1 ripe Banana
- ⅜ cup cream (48% fat)
- 2 Tbsps powdered sugar
- 2 Tbsps cream cheese
- 1 Tbsp lemon juice
- To decorate
- colored, sugar Bauble

Preparation steps
1.
For the cupcakes: heat the oven to 200C,400F, gas 6. Place paper cases in a 12 hole muffin tin.
2.
Mash the bananas. Beat the eggs with the butter and sugar until well blended. Beat in the banana, then stir in the walnuts.
3.
Sift in the flour and baking powder and lightly mix in, until just combined.
4.
Spoon the mixture into the paper cases and bake for about 25 minutes until golden and risen. Leave in the tins for 5 minutes, then cool on a wire rack.
5.
For the frosting: mash the banana and beat in the cream, confectioners'sugar, cream cheese and lemon juice until thick and smooth.
6.
Spread the topping on the cakes and decorate with sugar baubles.
