Ingredients

For the waffles
4 eggs
salt
125 grams butter
80 grams sugar
200 grams Pastry flour
50 grams cornstarch
250 milliliters milk
Fat (for the waffle iron)
For the cream
200 grams cream cheese (pure)
6 Tbsps apple sauce
2 Tbsps lemon juice
3 Tbsps honey
1 ½ Tbsps Matcha
200 milliliters Whipped cream
Also
mint (for garnish)

Preparation steps

Separate the egg whites and yolks. Beat the egg whites with a pinch of salt until stiff.

For the waffle batter, beat the butter and sugar until creamy. Gradually stir in the egg yolks. Add in the flour and cornstarch and stir in the milk. Mix until smooth. Finally, fold in the egg whites gently.

Heat up the waffle iron, grease lightly with some oil and pour 3-4 tablespoons batter into it. Cook the waffle until golden brown. Remove the waffle from waffle iron and allow to cool. Cook more waffles from the remaining batter.

For the apple cream filling, mix the cream cheese with the apple sauce, lemon juice, honey and Matcha. Beat the cream until stiff and gradually fold into the cream cheese mixture.

Pour the apple cream into a piping bag with star nozzle at tip. Pipe out the apple cream on half of the waffles and cover each with another waffles. Cut into halves and serve garnished with mint.
